Beef Pasta Sauce
2 lbs of hamburger
2 large onions, diced
2 green peppers, diced
4 cloves garlic, crushed and diced
3 large cans of whole tomatoes
2 small cans tomato paste
3 tbl of Italian seasoning
½ cup of red wine or cooking sherry
¼ tsp of crushed red pepper
½ tsp of black pepper
salt to taste
Brown the hamburger in the pot, drain and set aside.
Reheat the pot, add the olive oil and crushed garlic, stir briefly before
adding the diced onions. Sauté the onions until they just begin to turn
brown and add the green pepper and sauté until peppers are becoming soft.
Add the browned hamburger and stir. Add the whole tomatoes with the juice
and slice them with a sharp knife to break them up. Add the tomato paste
and stir to mix it into the sauce. Add the spices and wine and simmer for
two hours over very low heat. Stir occasionally and scrape the bottom of
the pot to avoid burning.
Serves six with leftovers for another meal.
Variation: Replace the Italian seasoning
with chili powder, some jalapenos and a little more crushed red pepper and
this recipe makes and excellent taco filling.
