Beef Meatloaf
2 lbs of hamburger meat
1 tsp salt
½ tsp pepper
2 tbl fresh thyme (1 tsp dried)
2 tbl fresh sage (1 tsp dried)
1 tbl marjoram (½ tsp dried)
2 tsp dried mustard
2 cups of gluten free Crispy Rice cereal
2 whole eggs
Thaw hamburger in the refrigerator or microwave.
Combine the meat and spices in a bowl and mix thoroughly to distribute the
spices throughout the meat. In a separate bowl, combine the Rice Crispies
and eggs and stir until coated. Add to the egg mixture to the meat and
combine. Form into loafs and place into a baking dish. Bake at 350F for 45
minutes.
Variations
Tomato sauce can be spread over the beef loaves before
baking for something different.
Also, the recipe can be converted to an Italian
meatball recipe by replacing the thyme, sage and marjoram with Italian
seasoning. Form into meatballs and bake for 45 minutes at 350F. Add to
prepared tomato sauce and serve over pasta.
In our house, we use gluten free Crispy Rice as filler
but bread crumbs work well too.
